So, I'm not a great improv cook. I envy people who can just look in their pantry and just whip something up delicious. I can barely do that with side dishes. Leftover olives have been sitting in my fridge for two months because I can't think of something to do with them with the materials I have in my pantry. Thus, they sit.

However, tonight we had to improv. We
hosted a party over the weekend, as previously addressed, so we had some pretty random things left over. One of the things I wanted to use was the blocks of cheese. At the party, I had bought some blocks of cheese to cut into some small blocks to put on our cheese board. They were delicious, but we had a lot of leftover cheese. At first, we were going to make grilled cheese, but then we realized that we only had three real slices of bread and one "end." I think anyone, despite your cooking expertise could guarantee a non-success with an end on your grilled cheese sandwich. So, we thought more.

I delved into our fridge and found some leftover tomatoes. I had bought two Roma tomatoes the other day at the store because I thought that we didn't have any. Turns out, I was wrong. We had tomatoes. Now, I'm not a big tomato fan. If it were up to me, they would only be on pizza and in spaghetti sauce. However, I'm trying to recently open my culinary mind -- even for something as simple as tomatoes. So, we decided to use the rogue tomato in the improvisational recipe.

We had leftover bacon from when we made some baked potato soup. I try my best to not eat bacon often, (because if it were up to me, I would eat it every day) so it's just been sitting in our fridge, taunting me. Well, meet my skillet, bacon. I will not add you into our delicious combo.

Now, I somehow injured my right heel on Saturday (I blame the beer) so standing for an extended period of time is difficult for me right now. So, David took over the cooking duties. With some leftover bacon, some leftover bread, some leftover cheese, some leftover tomato and some purpose-driven sliced chicken and turkey, we made our very own Club sandwich.

We put our sandwich with a wonderful vegetable array (leftover from the party also) so that it looked a bit more balanced and colorful. I once had a friend I was rather close to in college who required that her plate for every meal have something of each color on it. She was cooky, but really healthy. I mean, how many purple foods are there outside of grape jelly and Jell-o? However, this meal was an homage to Susie. And it was delicious.
