I digress. Tonight, since we weren't "celebrating" Valentine's Day, we decided to stay in and cook. Well, I did. David actually left to have some "guy time" with a friend of ours. So, we did cook dinner before he left.
We made Tandoori-spiced chicken. I didn't really know what all that entailed, but it sounded like Indian food and that made me pretty excited. After some small research, I found it was pretty much Tikka, which is my favorite type of Indian spice. So, I was even more excited.
It was so simple to make. Pretty much, you mix up some yogurt, lemon juice and a lot of Middle-Eastern-like spices as seen here. Then, you chop up the chicken and put the chicken cubes into the dish with the yogurt concoction. The recipe said to marinate the chicken for about half-an-hour. I covered it with saran wrap and refrigerated it for about that long. Even with the saran wrap, the chicken made our entire fridge smell delicious. It was wonderful. I couldn't wait. After 30 minutes, I started plucking the pieces out of the sauce and skewering them for the grill.
David was wonderful enough to grill the skewers outside (when it was about 30ish degrees outside). He also was awesome and whipped up some wild rice mix for us. Granted, it was Rice-a-Roni...hence why it worked out so well. Damn altitude. But, this was the final product. It was delicious. We had to reheat the chicken because it was so very cold outside that the chicken got cold really fast. Besides that fact, this meal got a 4 out of 5. We forgot to oil the grill before grilling the kabobs, so they didn't get as crispy as they were supposed to. But, that's easily rectifiable and they were delicious all the same.

Rice-a-roni, brilliant idea.
I've been making a lot of orzo, since it is rice-ish in texture and takes spices pretty well.
We make so much orzo too! I think before moving here, I had it twice in my life. Now, we eat it once every-other week if not more.
