Pasta + Vodka = Happiness in a bowl

So, this week's theme in the household is cooking the Joy of Cooking recipes. Today's recipe was Penne with Vodka Sauce.

As we discussed previously in this blog how I have problems chopping onions. I have even been known to wear sunglasses while chopping onions. Instead, this time, I just let David chop them (as his eyes seemingly are ineffective). And, when he needed them finely chopped, he used nothing better than THE SLAP CHOP:


I started making the sauce. I melted some butter, added the chopped onion and sauteed them. I added some chopped garlic. Then, I added some vodka, Roma tomatoes (chopped) and some red pepper flakes. We simmered it for about 10 minutes. After adding some heavy cream, it looked awesome:


After all, I was pretty excited about how it turned out. Sprinkled some glorious Parmesan cheese on top. And it looked perfect:


I give it a 4 out of 5. Really great, easy recipe and I really loved the taste too. Seemed to be a hit with the other on the other person on the couch too.
